surf 'n turf foil packets

Ingredients

  • 1/2 lb. sirloin steak, cut into 1″ cubes
  • 1/2 lb. shrimp, cleaned and deveined
  • 2 ears corn, each cut crosswise into 4 pieces
  • 1 c. grape tomatoes
  • 1 small red onion, cut into thick slices
  • 1 lime, sliced into wedges
  • 2 cloves garlic, thinly sliced
  • 1 tbsp. Old Bay Seasoning
  • 1 tbsp. fresh thyme leaves
  • 1 tsp. ground cumin
  • Freshly ground black pepper
  • 1 tbsp. freshly chopped parsley, for garnish
  • Lime wedges, for garnish

Instructions

  • Preheat: Heat the grill to high. Cut 4 sheets of foil, each about 12 inches long.
  • Fill Packs: Divide the steak, shrimp, corn, tomatoes, onion, lime slices, and garlic evenly among the foil sheets. Drizzle each with oil and sprinkle with Old Bay, fresh thyme, cumin, and black pepper.
  • Seal: Fold each foil pack crosswise to cover the mixture completely, then roll the top and bottom edges to seal tightly.
  • Grill: Place the foil packs on the grill and cook for 6–8 minutes per side, until the shrimp are cooked through and the steak reaches your desired doneness.
  • Serve: Carefully open the foil packs, garnish with parsley, and serve with lime wedges.a
