Ingredients
- 3 tablespoons lime juice
- 1 tablespoon sesame oil
- 1-1/2 teaspoons reduced-sodium soy sauce
- 1 garlic clove, minced
- 1/2 teaspoon grated fresh ginger root or 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 medium eggplant (1-1/4 pounds), cut lengthwise into 1/2-inch slices
- 2 teaspoons honey
- 1/8 teaspoon crushed red pepper flakes
- Thinly sliced green onion and sesame seeds
Instructions
- Marinate: In a small bowl, whisk the first 7 ingredients (lime juice through pepper) until blended. Brush 2 tablespoons of the mixture over both sides of the eggplant slices.
- Grill: Grill the eggplant, covered, over medium heat until tender, about 4–6 minutes per side. Transfer the slices to a serving plate.
- Sauce: Stir the honey and crushed red pepper flakes into the remaining juice mixture, then drizzle over the grilled eggplant.
- Garnish: Sprinkle with thinly sliced green onion and sesame seeds.
