Ingredients
- 2 lbs rhubarb chopped into 1″ pieces
- 3 tbsp cornstarch
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 2 T orange juice
- 2 T unsalted butter

- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp orange zest
- 4 tbsp unsalted butter, cold, cut into small cubes
- 1/4 cup milk
- 1 egg
Instructions
- Filling: In a 10-inch cast-iron skillet, combine the rhubarb, cornstarch, both sugars, the juice, and 2 tablespoons butter. Stir gently to coat, then set aside while you prepare the biscuit topping.
- Dry Mix: In a bowl, stir together the dry ingredients and the lemon zest.
- Cut In: Cut in the butter until the mixture resembles coarse crumbs.
- Batter: Beat the egg with a fork to break it up, then stir in the milk. Add the egg-milk mixture to the dry ingredients and stir just until combined. Don’t overmix—some small lumps are fine. Set aside.
- Preheat Grill: Set your gas grill to medium and place the skillet on the grate. Adjust the burners as needed to maintain about 400°F throughout cooking.
- Cook Filling: Carefully stir the rhubarb mixture with a wooden spoon until it begins to bubble, then let it simmer for 1 full minute.
- Top: Spoon the biscuit dough around the perimeter of the pan first, then fill in the center, making about 10 biscuits.
- Bake: Close the grill lid and cook for about 20 minutes, until the biscuits are golden brown, firm to the touch, and fluffy (not wet).
- Cool: Using a pot holder, remove the skillet from the grill and place it on a trivet. Let cool for about 30 minutes.
- Serve: Spoon into bowls and serve with vanilla ice cream or homemade whipped cream.
- For Oven-Baking:
Filling (Oven): Combine the rhubarb filling ingredients in a saucepan. Bring to a simmer over medium heat and boil for 1 minute. Pour into an oven-safe baking dish and set aside. - Biscuit & Bake: Prepare the biscuits as directed above and spoon over the filling. Bake at 400°F for about 20 minutes, until the biscuits are golden and cooked through.
