Ingredients

  • 1 stalk rhubarb (4 ounces)
  • Canola oil
  • 1 ½ cups strawberries, chopped
  • 2 – 3 tablespoons raspberry preserves
  • Snipped fresh basil

Instructions

  • Preheat: Preheat an outdoor grill or indoor grill pan to high heat.
  • Grill: Brush the rhubarb with oil. Grill directly over high heat for about 5 minutes, turning frequently, until lightly charred and softened. Chop the grilled rhubarb.
  • Mix: In a bowl, stir together the strawberries and preserves. Add the chopped rhubarb and snipped fresh basil to taste, stirring to combine.
  • Serve: Serve with cinnamon pita chips, or spoon over pound cake, angel food cake, or vanilla ice cream.
  • Enjoy!
