Ingredients
- 1 stalk rhubarb (4 ounces)
- Canola oil
- 1 ½ cups strawberries, chopped
- 2 – 3 tablespoons raspberry preserves
- Snipped fresh basil
Instructions
- Preheat: Preheat an outdoor grill or indoor grill pan to high heat.
- Grill: Brush the rhubarb with oil. Grill directly over high heat for about 5 minutes, turning frequently, until lightly charred and softened. Chop the grilled rhubarb.
- Mix: In a bowl, stir together the strawberries and preserves. Add the chopped rhubarb and snipped fresh basil to taste, stirring to combine.
- Serve: Serve with cinnamon pita chips, or spoon over pound cake, angel food cake, or vanilla ice cream.
